Michael Carlson/Schwa
Schwa is a restaurant on Ashland and Le Moyne in Chicago. I found this article on it in the latest issue of GQ and can't wait to go try it. Apparently, after serving a legendary 14-course meal to the worlds most accomplished chefs for Trotter's 20th anniversary, head chef Michael Carlson shut down the restaurant because of all the pressure. Then he did a lot of drugs and some drinking. Oh, and they listen to rap music there.
